If you’re anything like me, you’re a fat kid stuck in a fat kids body. And thanks to the egg heads at the athletic commission , MMA is a weight class Restricted sport. 🙁 If you’re in a pinch and need to feed the inner fat kid without tipping the scales, use the recipes listed below.
1. Balls and salsa.
the Spanish word for egg is huevos which is more often used to describe testicles. And avocado literally translates to testicle tree. So it only makes sense to eat these foods together right ? Grease a frying pan with a tablespoon of grape seed oil over medium heat. Mix one egg and 6 egg whites and pour into the pan. Once it’s cooked enough to flip , flip it and cook the other side. Once cooked plate the omelette and top with mashed avocado and your favorite salsa.
2. I can’t believe it’s not fried !
Take some chicken breasts, a bowl of egg whites , and a bowl of low carb bread crumbs, dip the chicken in the egg whites then roll in the bread crumbs. You can also add a pinch of powdered ranch to the bread crumbs. Line on a baking tray and cook at 400 degrees for 30-40 minutes, flipping half way through.
3. Turkey meatloaf muffins
mix one pound of ground turkey breast , one cup of low carb bread crumbs and one whole egg. Mix together and stuff in a muffin tin with each hole 3/4 full. Bake at 350 for 40-60 minutes.
(Optional) glaze- mix 1/2 cup Sriracha sauce , 1/2 cup ketchup and 1 TBSP honey. Drizzle over meatloaf muffins with a spoon
4. Low carb spaghetti with stuffed meatballs
One package dream fields low carb spaghetti noodles- follow directions on packages and toss with 1/2 cup olive oil.
Mix one pound of ground turkey breast with one cup low carb bread crumbs and one whole egg. Take mozzarella sticks and cut into 3-4 one inch pieces. Use turkey meat to mold meatballs around chunks of cheese. Grease a frying pan with grape seed oil over medium high heat. Cover and cook until internal temperature reaches 165 degrees.

5. Bison burgers
this is the simplest one of all! Take one 1lb package of bison meat and divide into four patties. Be careful not to overwork the meat otherwise it will be tough. Grease a pan with grape seed oil and cook the patties until internal temperature reaches 160 degrees. Top with your favorite toppings and serve on a romaine lettuce bun.
